Awesome post! It's hard to pick and choose what to comment on, so I'll just keep it simple.
Since there are some landmarks that require you to have 10 of each international building in order to use the landmark do you feel like you're missing out on a few things? In my city I have built exactly 10 of each to meet the requirements to place those landmarks, but I will not be placing any more even if the mayor's contest has an assignment for it. Even Tokyo doesn't carry the same base population as what an epic building does, which is why I will not be placing any more.
The way I determined that was to take a variety of all the different buildings to an area in my city that is not affected by any population boosting item and see what it's base value is. All Epic buildings hold a higher base population value than any other building, so I have determined that I will not be placing any more than the 10 of each required to place certain landmarks.
As a side note: I too was reluctant to develop Vu Tower knowing it was for destruction. I was hoping and praying that it was not the kind of destruction known in other SimCity PC games because those disasters caused large amounts of destruction that didn't just include residential buildings, but it would destroy Roads, power lines, services and anything else that was in the path of the destruction. At least this game doesn't require making separate power and water lines, but the fear of what that destruction would be caused me to wait far too long to do Vu Tower. I was a bit nervous launching my first Vu disaster, but once I did, I realized it wasn't bad at all. It's no different than upgrading a residential building and was fine with it and is now my #1 resource for Gold Keys.

Regarding your question.

Since I really don't care for the look of the Paris and London building, especially side by side with modern skyscrapers I won't be going out of my way to build these buildings and as far as Landmarks like the Eifel Tower goes given its size both in footprint and height I don't think it adds much to the skyline to make it worth the trouble of fitting it in. If I happen to unlock Big Ben I would deploy that but I won't go out of my way to do it it would have to be as a result of assignments. Until then I will continue to deploy my trusty and impactful Washington Monument it's easy to fit 4x4 footprint, 3 Epic pt value, and tremendous population boost make it a winner. Who says there can be only one, I long ago resigned myself to the fact that if I want to maximize my city I would need to compromise on some aesthetics.
Now if I may I would like to ask you a question. You seem to be ahead of me in knowledge regarding Epic Towers what do you feel is the optimum number of Gold Towers? I've been reading that the number of fragments needed to earn a full token increases as the number of towers increase is there a sweet spot? If so what is it? Does it make sense since you can only store 5 Gold Tokens to intentionally stop some towers at silver in order to be able to have 5 silver and 5 gold tokens available? OK that may have been more than 1 question but if you have any answers I would love to hear them.

I'm probably not that much further ahead than you if at all. I only have 2 bronze, 6 silver and 8 or 9 Gold right now and having been increasing Gold by one per week since the Mayor's contest started.
I have an opinion on the optimum number, but it's only an opinion. The optimum number in my mind is...... all of them. I'll get into my reasoning for this in a minute.
Yes the pieces needed for 1 token does increase and it has been said by someone else that the response from EA said that the number required will top out at some point, but I have yet to hear what number that is for any of them.
I believe it does make sense to stop some at Bronze or Silver, but that is just an opinion. I've ran into many cases where I'm looking for certain products to be done close to the same time, but to do that I would use a cheetah on one building and a silver or bronze on the other so both products are ready at relatively the same time or close to it. I don't feel the need to use cheetah every time I want to speed something up. It all depends on the circumstance at the time. There's also the added benefit of being able to store up to 15 speedup tokens vs. 5. Even those some don't speed up as fast as others.
Now back to that optimum number question. Where you can only store 5 tokens at a time, just because buildings are ready to collect does not mean you have to collect them all at that time. Theoretically, if you have enough buildings to collect 10 gold tokens in a single day (I don't know anyone who's done it, so not sure it's even possible) then to collect 5 in the morning and immediately using them on 5 different commercial buildings making production speed up like wildfire would leave you with 5 more to use later in the day for another purpose. Someone would have to get to that point first. I know there are some that are working their way there, but I've yet to hear any numbers on what the actual maximum count is, so it's tough to say if some of these things are even possible to achieve in the game.
Even if you can't get to the point where you're collecting that many per day, I think there are still benefits of continuing to add Epic buildings. Since these Epic buildings have a higher base population count and when boosted I've seen as high as a 2000 sim difference between an Epic building and a non-epic building in the exact same location, it would make sense to continue building them for the population boost if nothing else.
