My issue with that is then the animation would look too snappy

In my opinion I think all the 3-button grabs are too long to ever have happen in the air as a realistic skater. I would need to have at least 10ft of air in order to quickly hit the Benihana and it be over as soon as it started before I hit the ground. Any of those 3 button grabs are just too complex I have a TON of hours and I RARELY do these grabs. If they ever work, they so slow I never  get em off early enough before crashing so I just stopped doing em lol.

A benihana on flat ground is just not possible, but it absolutely is possible to do it off of small ramps. I posted it to YouTube to show that it's possible and quite handily so. The trick a lot of people miss with Benihanas or other 3-button combo grabs is that you can immediately transition into them without having to confirm the tail/nose grab first, which is what I show in the clip. 

One thing I will say, is that my controller's right stick is slowly dying and I've been having issues performing tailstops or getting those tail/nose grabs as easy as I used to. That can absolutely account for difficulties performing these grabs consistently. 

But if you have no hardware holding you back then you should be able to do them easily with a bit of practice. My favourite combo grab is the one-foot tail grab (RS ↑ + FS grab + front foot) which just looks so sick and nobody ever uses it.
