I swear I have seen this in Hero Showdown! Someone playing as Maul or other characters that can't/shouldn't heal are almost dead, then run and hide to somehow get full health...

Getting full health shouldn't happen... But health regeneration is normal, different amounts for different heroes.
This is actually explained in the little tips that sometimes appear when you are loading up the game. If you are selected as the next target, the moment you become the target, your health is regenerated back to 100%. I think this is good design, because it would be pretty unfair if your team's target was already down to almost nothing when the round starts. It just puts the targets on equal ground as the round begins.
If it wasn't because of Maul being the new target, it could be that he was deflecting some shots and then was able to regenerate.
If you see this in a light side hero, it is usually because Yoda is around. Phasma can also regenerate a lot of health at the last minute. Equipped with the right cards, Bossk can regenerate very quickly if he's standing in his own poison cloud.
