What's happening here is while the game is running, Windows is letting another application or process take "focus" priority, which then causes the game to minimize. Switching between Fullscreen/Windowed/Windowed Fullscreen usually resolves the rare minimizing issues, so this is an odd one.
You say you've closed background applications, but have you gone through a full clean boot yet? There's a specific Microsoft process for clean boots or selective startups here.
