No sexism. We're just assuming that a grand master of Wing Chun who spent 10 years specializing in the Lone Pole Form is probably a tad bit better at using his stick than an orphan girl from the desert.
Possibly. Though Rey is actually a Jedi in-training, so maybe not. She can Force-pull his stick out of his hands and beat him with his own stick.
