This happened to me, too.  After many many many sim days one finally showed back up randomly.  I had the same issue as you, I couldn't call a new one on the phone and the old one never showed up so I could fire.  It still seems to be kind of buggy, I haven't been counting the days super religiously but it's definitely not every 3 days like it's supposed to be for me
