Start small. Have your Sim do all the work the first few days. Don't restock so soon. As long as there are other things to buy Sims won't fuss or just hang out like when they do when out of inventory. Put an espresso machine and a few end tables and coffee table in the building. So your Sim can stay energized. Make sure to add a shower somewhere, or the AL mirror so they can clean up fast. If your Sim is in gold aspiration then put the Engerizer in their inventory and use it when your Sim is low on hygiene, hunger, energy etc.
Don't hire Sims who require higher pay and have badges etc. They get those skills fast enough like running a register. Make sure you pay eveyrone fairly including your Sim. Don't over pay! Fair is good enough. Once you get back into the grove hire extra employees so you can call them in when others get tired. Send those home and call in second shift. It only becomes annoying when everyone shows up at one time, send some home, so you can call them back later. Make sure you use your wholesale discounts, sell the inventory and buy it with wholesale prices once you start getting wholesale perks.
If it's too busy for your Sims, raise the prices.
ETA: Unless some aren't aware, OFB was changed in a later EP, where Sims don't really have to be approached anymore to make them buy something. They will eventually buy it on their own. This really anoyed me, and the Best of the Best award is rewarded in about two days. And that change makes players pay their own Sim, that is not how OFB worked in the beginning. I rarely have a Sim 'sale' and use my own Sim and usually it's level five etc. within two days. It is rather boring now. ETA: Another change is Sims don't hang out but buy and leave. That is also not how OFB worked when released. It must have been FT that made all those (easy) changes.
