My sims always complete their LTWs, even on normal lifespans and without Relativity in play (and until recently, without vacations). I pick LTWs that relate to activities my sims will do anyway, either because the wishes are in line with my goals for them (skills, careers), or the goals will get achieved naturally without much effort (e.g. Super Popular for social sims, the money ones for rich kids). If I know I'm going to move out a kid soon after they age up to YA, I'll pick a wish they can achieve as a teenager. The only LTWs I don't try to achieve are those of sims that marry into the family and immediately move out, but then I don't really think of them as "my" sims, just my sims' love interests.
I tend to see my sims' wishes as part of their personalities just like their traits, and it would make me feel bad not to give them that fulfillment. Besides, it's nice to see them working towards long-term goals and imagining their excitement when they finally get there.
