I know some people still make sims 3 videos . But not at the volume it was at before . It got me thinking of maybe trying the YouTube thing again with sims 3 possibly . But I'm unsure if it's somethin...

There are certain things that will make me want to watch/not watch a Sims video on YT and Twitch.tv... but you should create whatever you want to do. You could even consider blogging on a site like tumblr. There's still a community for TS3 over there. That's where I blog.
I eventually plan on streaming when I can get over my anxiety. :D I'm only missing a decent mic that's not attached to headphones but I haven't gotten that far yet.
