For your greenhouse to function like an indoor space so the plants don't go dormant in winter, it needs to have full walls, floors, ceilings (which would simply be flooring placed at the top of your top floor that disappears when you place the greenhouse roof pieces on top of it). Inside, you can place planter bowls (one comes with the set; some others with Supernatural) or the ITF soil rugs, which allow you to plant indoors without cheats. You actually don't have to have a greenhouse at all to plant this way; you could plant the garden in your sims' house if you wanted. So, which pieces from the greenhouse set you use doesn't really matter. There are a lot of ways you could put one together depending on what size and shape you want. I would suggest looking at the venue greenhouse to see how they connected the roof pieces to get some ideas.
