You can get chicks in the chicken coop. Just skip a day of collecting the eggs, and a couple of days later, there will be chicks. Your sims can pet them and play with them, but in a few days, they will disappear, supposedly having flown away.
As to horses, yes, you can breed them, train them, and sell them. If you take them to competitions at the equestrian center, and they win, they will be worth more. Also, if one or both of their parents are champions, they will be worth more. Adopted horses will also be worth more after training and winning competitions. Also, you can take a male to the equestrian center and earn money with his stud services, and the more competitions he has won, the more he will earn.
