My settings depend on the scenario that I am playing and if I get board with one theme, I change to a different saved game with a different theme. For the most part I have aging turned off. I play my family tree in one world and started with my great grand parents and cycled through the generations of relatives and only turned aging on when I wanted them to age and have a party.
I set weather, I set Winter to the lowest setting and the other seasons to maximum settings. I will only change them if I want to play a Winter or Summer themed scenario.
The only time I use the Lunar Cycle is if I am playing a Medieval themed scenario.
