It depends on the disease, the strain, the sims and their immunity, and some random elements. If they are constantly around sick sims while they are contagious, they have a greater chance of contracting the disease. Some of the diseases take a while before the symptoms show up so your sim might not even realize they are sick yet.
One of my sims took care of everyone around him who was sick in the house and never got sick himself (or maybe just with the common cold, this was long ago). Kind of like in real life. :)
