MC commands run on City Hall/computers should default to all living (human, as opposed to animal) sims in town if you hit "X" to dismiss the filter options that always show up. As for which Demographic report to use, there are four of them that are career related so it becomes a matter of trying each one until you get the results that have enough information to be useful.
Alternatively, or in addition, you can always run some harmless other MC command like Sim > Basic > Family Tree on City Hall and instead of "X" to dismiss the filter, choose a career related one. You don't really need to run 50 or 100+ Family Trees, once you get the list of sims that fit the filter requirements you would be done and can "X" out.
