This is a tough question to answer, because it all depends on your play style.
If you want to expand gameplay without altering things too much, then Ambitions, World Adventures, Generations, or Late Night. With Ambitions you get more careers and the option to become self employed, plus a new town. With World Adventures, a way to take a break away from your current world when things get a little stale. With Late Night, you get a new world, skyscrapers, venues and vampires. Generations adds more stuff for each life stage, like canes, playground items, kid decor, etc.
So, those are the "safest" to get if you want more objects and expanded gameplay but without rocking the boat.
The other EPs come with loads of more stuff, but in a way that some people either love or hate because they're more niche and introduce elements that some find intrusive or immersive-breaking, especially if they want realism.
