I always thought:
Baby: 0-2
Toddler: 3-5
Child: 6-12
Teen: 13-19
YA: 20-35
Adult: 36-59
Elder: 60+
And I, too, assume elder started at 60 due to senior discount prices' age requirement lol. I feel like the ages are a hard things to guess. Since sims don't age organically, they look the same throughout each life stage (as in - children look the same at the beginning as they do at the end in their child lifestage...even though children in real life would look drastically different between the ages of 6 and 12). So sometimes I'll do slight things to make it more organic. I'll have child sims dress and act more...teenager-y as they near their teenage years, have teens act more mature as they near young adulthood, have YAs dressing more conservatively (unless their personality doesn't make sense for it) as they near full adulthood, and I'll have my adult sims get a few grays in their hair as they near their elder years.
