I found a quick solution to this when it happened to me today. I have mods installed and just got werewolves. I made a couple of cute cats and uploaded them to my library then when I took them out of the gallery later the cats I made were all black and only removing the custom colouring reverted them to having texture. Super frustrated I came here but got nothing so what I did was go to my library in origin and selected "repair" for the sims 4. When I went back into my game and added the same family in my library to cas they no longer were black and had all their cool colouring visible. Hope this helps!
TL;DR - Select repair on the sims 4 game in your origin library 🙂
