Having this issue myself. I got sick of my chickens and cows dying what with it taking so much effort to raise relationship with them, so I unchecked animal aging. It seems like they're aging inconsistently for me? I got all my current animals at the same time but some of them are elders (found out because I got the notification about one of my hens getting on in years) and some of them are young adults. Super super frustrating. It's just a guess but I think there's a chance it'll happen on scene change, as I didn't notice any issues until I recently aged up my child to a teen and started going to school with them.

@Flamesil0cks It's still happening in my game as well. In the most recent incident, I had temporarily switched (abt 3 game-days) to a different household in Chestnut Ridge, and when I switched back to my regular household I see that three chickens and a cow all aged up. All were young adults before the switch and now most are adults, though one hen is now an elder. I hope they are able to figure this one out soon.
