This is true in PC as well - I can find no way to turn off or delete a style trend after it's been created. I had one Trendsetter sim who created one style trend for masculine and one for feminine. The styles show up all over, even 3 generations after her death.
I think the only workaround at this point is to make all 5 trends for each sex, so you have more of a selection showing up.

Could this just mean it's something they haven't covered while adding the Style Influencer career?

As it's happening on both console and PC, I'm going to treat this as regular PC issue and add to the list on the next round.
