I’m experiencing a similar issue, I noticed that their ears are distorted, and nothing I do seems to fix it so I had to give them a hairstyle that covers their ears.
They looked just fine as an infant and toddler. And the only thing I have adjusted in CAS is their hair color and weight.
After reading your post and all the responses I tested it out aging them to YA, and it does look like their facial features become more warped as they age.
They have the same nose as their mother but it looks distorted, it was a little bit too high up and smooshed in to their face… they also suffered from the no chin/jaw weirdness etc.
I can manually fix everything except for their poor ears 😣

Yeah which is weird since I summoned a new grim after the pack release via the Grimophone…

Yeah, I haven't a clue. One of my kids with Grim seemed to have older version's nose (it wasn't her mother's nose, that's for sure). And this was in a new save I made the day before LD came out, so I know it's the new Grim.
