My Sim does have a "micro home"--she has four tiles on the ground under her tent, lol--but I was going to suggest turning off-the-grid off and back on to see if that made a difference.
She also applied "energy efficient" upgrades to everything she owns that is capable of getting it. I don't think you can do it with lights. (She has camping lanterns.) My impression from off-the-grid play is that the windmills and solar panels don't produce a lot of electricity. ☹️ I usually end up using candles and lanterns and saving the power for the fridge and the fabricator. As an example, my tent-living Sim has three windmills and only a laptop, a boom box, a stove, and a fridge; she ran out of power every day until I applied the energy efficient upgrade to the fridge. In another save, in two lots with two windmills and only a fridge and stove (that they barely used) they ran out of power multiple times a day until they applied the energy efficient upgrade to the fridge. So it’s possible you have too many electric items.
I also don't know if there's a difference in how off-the-grid works in Mount Komorebi. I’ve now played off-grid in Oasis Springs, Sulani, and Port Promise (Evergreen Harbor) and the amount of power generated seems pretty consistent across those locations (ie two windmills will run your fridge and stove if the fridge has the energy efficient upgrade).
