@MindyflyzI think this is just a timing issue rather than a bug.  If it said that there were two days of class left on Wednesday morning, then those two days are Wednesday and Thursday, not 2 days from Wednesday.  That counter changes either at midnight or sometime between midnight and 6AM.  I think this one is midnight though (too many different times scheduled things happen in this game :D).  So the 2 days started when the counter reset which was before your sim got up and the term ends at Thursday, midnight.  Friday would be after the end of the term.  It's sometime confusing but that's the way it appears to work.  So your sim did take his exam on the last day of that class.

    I have had this issue consistently also.  For the first two terms, my sims will have the final for the M/W/F class on the last of those days before the semester ends.  Yet consistently (2 new games and five sims after I first encountered the issue) in the third term, my sim will take their finals on the second of those three days (i.e., on Wednesday when the semester started on Monday).  I completely removed my mods folder for the first of the new games with no change to the issue and am only using MC Command Center for this last save game, but I am still having this issue.
