Owning a restaurant, I think it should be more variety in knowledge among the sims you can hire. Almost everyone has little to zero knowledge to start with, which makes the strive to maintain the restaurant standard a bit hard. You shouldn't have to change to an easily cooked menu everytime you hire a new chef, for example.
