I will not play life stages for merfolk that don’t have a merman or mermaid form.
I will not age my merfolk past young adult.
It’s how I stay true to one of the more popular appearances of merfolk.
Of the two, I'd say eternal youth is more accurate. Eternal life means someone will never die, but it doesn't mean they won't show their age. Eternal youth says to me both immortality and always looking youthful.
