Let me first start by saying that not having toddlers in my game was never a deal breaking for me. However, if there is more gameplay like this thread is listing, it would definitely make it worth it. I love all of these ideas! Some of my favorites are, pacifiers, patting them on the back to get them to sleep, toddler beds, well I guess I just want everything in this thread. Some of my ideas, (I hope I didn't miss them) are temper tantrums when they don't get their way, I would like the smart milk from sims 2 brought back (so they can gain skills faster) and I doubt it's possible, but the toddler climbing in bed with parents in the middle of the night, because they had a nightmare, the ability to take a shower with the toddler and expanding on the multitasking, watching tv while rocking. Another idea would be teaching them to swim, but would that be more child than toddler? Not really sure.
More options for hair, a lot of clothes and objects that they can play with and the ability to interact with other sims, pets (when we get them) and if the parents have maxed a certain skill, they can teach the toddler that skill much faster.
