The best way to avoid it seeming like they're using stereotypes (like what happened with apu) is if they got people who actually have the accent they're going for to do the sims voice. Like for instance if they wanted a sim that sounds Indian, have someone from India do the voice. I think it would be great if they widened the range, I'm sure they could find a huge variety of diverse people to do sims voices for them.
I'd personally love to have Australian accents for my sims, since I'm from Australia.
