I really would love this too, I have a Vineyard, and Orchard, farm already set up.
I really want to build a winery and Brewery, and I have just the Sims to do it. couple of Irish folk.
You should be able to Bottle, and Barrel it, Name your craft, Store it let it age, and If you want sell it to Restaurants and Retailers.
Also it should be required to have at least 10 clusters of Grapes in the sim's inventory to craft a bottle of wine.
