My Sims always max out on the logic skill because I'll often have them play a game to increase their fun and social bars. And I don't find it boring - you see them cheating every once in a while, and I love the 'Natchez!' ('Checkmate!') phrase.
Handiness is quite useful - not only can you fix things right away, but many interactions aren't available until you upgrade the objects. I had a handy Sim upgrade everything in my legacy house a few generations back. She even upgraded items that I don't have in the house in case I want them later - I just store them in the household inventory.
I don't do mischief at all, because most pranks are only funny to the pranker. I did discover that Sims can plan a work prank, however, and most of those are cute - taking a llama to work, or some such nonsense.
Herbalism - it's the insects that are the problem. Of course, your Sim can read to level up, and I'll often park my Sims for an afternoon of reading, but you can't max out without making potions, and for that, you need insects. And with Seasons, it takes several visits to Granite Falls to get all of the plants, since not all of them are active in the same season. However, you can plant them at home once you get them - it's the insects that are a pain. It's a shame you can't breed them like frogs.
Photography - I wouldn't mind if I could just have my Sim read a book or tell my Sim to take random photographs. Setting up photographs takes too much time.
