Why would that break everything? Of course it will reset after you leave, but I don't recall them saying you couldn't edit it at the beginning of the day. As long as you have stage marks on the floor for your sims to interact with they'd be able to complete the job for the day.
The sims don't seem to recognise what props or objects are on the set while they are doing their scenes. They certainly don't react to the backdrop or the falling FX.
