So, I've imported Sims from one save to another.
Basically: They keep their skills and any aspiration reward traits, and relationships with anyone in their household. They lose their household and personal inventories, and relationships with anyone outside their household. (Yeah, we lost our death flowers and angelfish, but their save was totally bugged from a bluescreen while saving.)
You can save multiple households to your tray, and multiple houses, and then import them and cheat their relationships back. Some people create a room in the house to put all the inventory stuff.
Basically, the first time I tried it I used the instructions at the bottom of this page: https://www.carls-sims-4-guide.com/tutorials/rotational-play.php "Moving to a New Save File."
Thank you for that link and reminding me about the inventory! I would have definitely forgotten about that. That site seems to have a lot of other good information on it too, going to definitely look around on there a bit for more tips.
Also, thank you both @xochiquetzl_xkvn and @daikoyu for being so helpful! It's fixed now and I am 100% sure without you two helping us with things to try and ideas of what might have caused it we'd have given up by now and probably reverted to an old old save AND probably had the same problem happen again!
While I was importing the household back into that world I left the club leader as the only one left that was bugged so I didn't lose our club and all the club traits and stuff like that. As soon as I added the twin to the club it bugged her. Then I remembered what was mentioned about club outfits. I knew we hadn't been really using those but it made me wonder if we had ever set one and if we had what ours was set to. Wow it jogged my memory big time going into there. The same exact bracelet and necklace were the only 2 items in our club outfit still. It hadn't been causing a problem at all until a few days ago. We had been wanting to see if it would just add that to the outfit we had on at the time and I guess when it didn't we just always used the every day outfits or other outfits anyway. Maybe when we were copying outfits around we hit that 5 outfit limit on the every day and it bugged that category forcing the club outfit there. Even tho we never kept 5 just having 5 briefly when getting some new CC To try out and copying stuff around may have bugged it. I'm not sure.
As soon as I removed the club outfit and set it to None in the club settings all of our sims were instantly fixed. I feel like an idiot for not checking that earlier but we hadn't even used the club outfit and didn't even finish it so we had totally forgotten it even existed.
So thank you both so much, it's nice to be able to play again and know what caused it.

It’s nice you fix it. This bug with the club outfits is not a knew well bug. I don’t think I ever saw a bug report for. This bug is light to reproduce but most user never encounter it because they never have 5 outfits. I never created a report for because I think is wasted time for the overworked bug-fixing team.
Sure, as user it’s frustrating if you run in this and don’t find a report to and other blame it on your mods, because no, is not because of your mods. It’s a not know vanilla bug/feature.
