Thank you, all for helping me. Upon playing the game, I found some useful information that might be the solution to my own issue. I realize some of these were suggested to me above. But I had no idea what they meant. :facepalm: LOL. I thought you could only evict people from the households, not actually delete ones, not in the world.
So here are the answers for newbie Sim players
1. How you can cure vampirism.
You can research vampires and buy books about them. On the highest level, you will unlock the ability to make a cocktail that will turn a vampire back into a human. You will need to harvest plants to make this cocktail. I had my main Sim had learn this skill, and she gave it to the Vampire Sim. You cannot make a vampire drink the cocktail. So I then switched to play that Vampire Sim, and he drank the cocktail to become human. They married b/c Caleb is just too darn cute.
2. You can delete vampires in OTHER HOUSEHOLDS, even ones currently not in the world. Just go to Manage Households, note their names, select the other tab, "Other Households," and delete the vampires.

@EmMac1066 If your Sim (who isn't a vampire) has one of the vampirism cures in their inventory, under mean there's a "slay" interaction. This doesn't kill the vampire! You sim will instead throw the cure into their face and they'll become human! It's a mean interaction, so you wouldn't want to do it to a vampire you like.
