From the LE message that you posted, it looks like your game version is uptodate @everythingbozy . You may be best to post your LE in the LE support section of MCCC mod Discord server. Simmers there may be able to help you.

Try also evicting the sim. Then place her into a new home ,and test to see if she still disappears.
