It seems like the mod for sitting only applies to weddings, performances and movies, not in general or when they're eating dinner? I haven't used it personally, though. I wonder if you put on a movie during dinner that means they do stay seated?

Mccc mod has a module where you can disable all kinds of autonomous actions. You can click around on objects and Sims to see what actions you can disable.
