Can you opt out of the beta macOS and go back to the public release? Beta is never supported.
Try a whole new Sims 4 folder by moving your existing one to the desktop and trying to launch the game.

What content from your old Sims 4 folder did you move into the new Sims 4 folder?
Are you still running the beta OS?- 2 years ago
I opted out of beta and Im not sure how to go back to public release until a new update comes out. But I took the steps you provided and it was working the day before with mods/tray files etc. When I relaunched the game to start a new Sims 4 folder, I moved my mod/tray files from my desktop to the new files.

Ok. So the game works without the CC/Mods, you move them back into the Sims 4 Mods folder and the game breaks again? It's a Mod issue. You need to figure out which Mod(s) is causing the issue by adding into the Mods folder in batches, testing the game after each batch until you find the problematic Mod(s).
