While we're all trying to make beautiful mermaids in slow motion, here are a few things that made an improvement for me:
Scaling down (up?) the display resolution:
Disabling this stuff in Accessibility:
Making the dock stop doing its thing:
Opening in low resolution mode (after right clicking on the application icon and selecting "Get Info"):

Those are great tips, thanks. Have you tried disabling Retina display in the game options as well?
