Your Sims 4 folder will be in Documents > Electronic Arts. Look in your local Documents folder on your Mac. Don’t do a Spotlight search because it is hidden, look manually.

It doesn't just disappear. Maybe your iCloud settings moved it to the cloud - https://answers.ea.com/t5/Technical-Issues-Mac/READ-FIRST-Saves-CC-Mods-or-Library-items-disappeared/td-p/10242133
When you launch the game a new one will be created in your local Documents folder.
