There was a security update to macOS on the 24th. You mention it was working up until a few days ago, I wonder if there is a link? Probably not but there’s a very small chance.
Set up a new user account on your Mac and see if you can launch the game in that account. Presuming Origin is installed in your Macintosh HD > Applications folder?

The new account has the same issue sadly. I only got the newest software update for macOS this morning after my game already started acting up as one of my attempts to resolve the issue.

I don't think it ever asked for that access; origin on opening asked for admin password which I gave it, but I don't recall any other pop-ups.

Hmm. Maybe that’s the problem. Check in System Preferences > Security & Privacy > Files & Folders and make sure the game, not Origin, has access to your Documents folder.
