@celestialbeansim There are a few things you could try or check 🙂
Firstly try running a repair on the game - right click the Sims 4 game tile in Origin client and select 'Repair Game'. You should also make sure that some other program/software is not interfering with the game. The best way to do this is to do a Clean Boot and then check if the game crashes.
In some cases graphic card drivers may cause these issues as well, doing a clean install of drivers may help in this case.
With intermittent crashes like these it may be hard to track down what is causing it, but try the steps I posted above and let us know how you get on!

I have tried repairing the game and doing a clean boot, however the problem still occurs. I have also noticed I have problems opening the game, e.g. I will attempt to open it through Origin and the 'play' button will fade as though the game is loading up, then go back a few minutes later. I have tried removing all mods however this has not solved it.

In this case, could you please check your Windows Event Viewer and look for the Sims 4 crashes and if you find any post the details?
To get there open Windows Start menu and search for Event Viewer. In the Event Viewer on the left hand side select 'Windows Logs - Applications'. You can then scroll through the events on the right of the menu. If you find a launcher crash click on it and the details should appear below. We would need a copy paste of the 'Details' tab (not 'General').

Try resetting your user files as described in the factory reset described in this post: http://answers.ea.com/t5/The-Sims-4/FAQ-Troubleshooting-Steps-amp-Known-Issues/m-p/3621199
You won't loose anything. Just make sure to not delete any files and make a backup.
Try on a new game with nothing added back first (start new game). If it works, put back your save game and try again. If it still works, you can start putting stuff back.
- Options.ini (or just re-set all your settings manually)
- Tray Folder
- Screenshots/Videos/Custom music
- Rest of the save games (leave out slot_00000001.save which is the autosave)
- Custom content like clothing, hair, skins, make up ....
- Mods (one by one, making sure they all still work)
The rest does not need putting back, cause they are mostly cache files that recreate or log files that are not needed for the game.
