Randomly after about 5 minutes of play my UI keeps disappearing. You can't do anything, can't save, can't exit. I've tried without mods tested the game without doing certain things 8 times. I noticed it usually does it after I take a picture of my dog for simstagram or after I exit the gallery or build mode. This update really messed up my game.
With removing your mods, did you clear the game cache and delete the localthumbcache.package from the Sims 4 folder to help with troubleshooting.

If that doesn't help, you could try repair game and/or a Sims 4 factory reset.
Repair Game:
In Origin > Game Library - right-click on Sims 4 and select Repair. - To make sure the install files and such are in working order.
Sims 4 factory reset:
Move or rename your current Sims 4 folder to Sims4Backup. Launch the game and play the game.
If it's not working, don't save. However, if everything is playing okay then start putting the files back. (list of files and folders below).
- Options.ini (User game settings)
- Tray Folder (Sims/Houses/Commercial lots and rooms)
- Screenshots/Videos/Custom music
- Rest of the save games, if any.
(leave out slot_00000001.save which is the autosave. It is not used anymore.)
- Custom content like clothing, hair, skins, and makeup
- Mods (Put these back one by one to make sure they all still work)
