Yes, the game works perfectly without the mods, but I can't figure out what Mods, or even CC are conflicting/conflicting with each other. I think it could be CC since I removed all of my Script mods, but I am not sure there is a way for me to figure out what is the problem since I have a Mac and cannot use a software like Mod Conflict Detector as it is not avaliable to my platform. I just want my game to work!
The mod conflict detector is to find problems between mods, not broken mods.
Take all you CC out of the folder and put half back, test the game. Keep splitting and testing until you find the broken CC.
Update or delete that.

I just split all my CC into categorized folders, gonna try your tip. Thanks!

Update: Removed batches of CC, my CC doesn't seem to be the issue, for some reason. Tried clearing cache and repairing my game, and it still doesn't work. Even removed ALL CC and Mods and still, crashes exactly when I press "Add new sim". No freeze, just a complete crash. I don't know what the deal is.
Give a factory reset a try:

Did a factory reset, and still..crashes from the very second I click on the "Add sim" icon.
Could you post a DxDiag?
Please follow this how to on how to gather your DxDiag.
You can post the DxDiag by attaching it to your next reply.
Don't paste it directly into your answer, because that won't fit.
