You can just marry them then they'll be added to your household.

Or you can merge them via the household manager (go to map view and click on the icon with the two people). From there you can split the Sim you want to move into yours and add to your household.

You can also edit any Sim from the household manager.

To play another family, just choose them to play from the map at startup
