In the past, I have pretty much ignored the Holidays feature, except for Winterfest and Harvestfest. IRL I love holidays, especially Christmas. I recently started a new save for the SimLit story I'm writing, and I filled the calendar with all sorts of holidays. I even downloaded some holiday tradition mods to add even more activities for my sims to do.
My Holiday list so far is:
In addition to the holidays, I plan to celebrate by having "festivals". (Basically, bringing all of the sims to a "festival" lot, as I did with Harvestfest.)

2. Shopping Day
3. Decorate for Winterfest (on the first day of Winter. IRL, I put up my Christmas Tree between October & November)
4. Winterfest Eve
5. Winterfest
6. Memory Day (Remembrance, Visit Family, be thankful, and tell stories)
7. New year's Eve
8. First Day of the year (Gnomes appear to welcome the new year, since I didn't feel they fit in on Harvestfest)
9. Family Day (Sort of a Mother's Day/Father's Day/Grandparent's Day combo.)
10. Nature Day (like earth day)
11. Flower Day (Love Day, but with the flower bunny. The flowers that the bunny brings are given to the recipient's date.)
12. A 5 day long set of summer holidays called Summerfest, where sims enjoy music, water activities, hang out by the fire, have fireworks, etc. On the last day, everyone wears costumes lol. It's supposed to get progressively "crazier" as the days go on. It's a time to have fun, and enjoy the days off from work/school)
13. Plumbob Wellness Day (A day of relaxation, it immediately follows Summerfest, and includes spa and wellness activities. Because it's good for sims to keep that plumbob green!)
14. Grilled Cheese Day (Because, of course sims would celebrate this!)
There are more, but these are the main holidays I plan to celebrate with my sims. (Haven't played through a full year in this save yet. I use 28-day seasons.)
