How to skip need for steed quest?

I don't think you can skip quests. And you will need the stables for a future quest. Also sometimes EA will run limited time quests based on some of the hobbies, so if you haven't completed this quest and they run a limited time event using one of the horse hobbies you might miss out on the prize.
Also after you do the life dreams and personally quest you will need the horse hobbies to complete some of the sim's life dreams.
