Some weapons make it easier for you to target aka hit ejecting pilots. It is still a very skillfull challenge, especially if you want to hit an ejecting pilot with the plasma rifle. It can help if you equip a smart pistol with enhanced targeting and try to eject in the same moment when your enemy ejects out of his Titan. Try to get the smart pistol targeting on him and shoot him out of the air.
