Go ahead and use them. It doesn't make a lot of sense to hoard unless you are going on vacation or something. It will all even out in the end.

Just like you, I just reached level 3 crafting and am starting to hoard the gold coins. It is hard not to spend them but I am trying to hold off until Act 3 starts so I can save them in order to get the tickets.
