This might of been answered before or even explained in game and I missed it but what do the icons mean next to performers? (I've the fist pump, the doller sign and the headphones)

They are associated with each act, blue is act one, pink is act two and green act three. Performers with more than one will be able to jam in each act that they have icons for. Example BGM has all three, whereas rev. Lovejoy has only the blue, he will not jam after act one.
Do you know this for sure ? Or will performers with blue icon only be able to jam on the rock stage and never go to the other stages/venues ? :)
I think it's the latter - the icons correlate to which stage they can perform on - a rock stage, a pop stage, and a hip hop stage. But it's not limited to Acts other than when we get each stage.
People who are rock stars can perform in all 3 acts, but only on the rock stage (like Homer); and certain other performers can perform on a different pop stage once we get it (like Rockstar Maggie); and others on a hip hop stage once we get that. Some performers like BGM or Lisa can do all 3 stages.
First, the pop stage and hip hop stages are the first prize of Acts 2 and 3. We need some way to earn event currency during those acts before we get those stages. Must be the rock stage with rock performers.
Second, Wierd Al prizes in Acts 2 and 3 allow you to unlock performing at the pop stage and hip hop stage. So you can add icons to certain performers. Doesn't make as much sense if you can't use him on the rock stage after Act 1
