It hasn't been spoilered clearly anywhere whether you can catch up after missing a day. Or whether the quest for the next day will only trigger after that day's quest has been completed. The pop-up message before the quests did say that you have to log in every day - so I'd guess you might miss out.

Can you get a friend to log in for you while you are away?
