I had problems with high frequency camera wobble in Virtual Desktop using SteamVR instead of VDXR.. try VDXR in the settings (if you are not in Virtual Desktop, then I don't know.)

So with the Pimax Crystal the issue seemed to be the USB connection although I'll need to test this for longer. I turned my USB audio interface off and plugged my steering wheel into a powered hub and got no more tracking issues. Fingers crossed thats that solved. Still not sure why it also happened on the Quest as that was wireless through airlink. Thanks for the advice anyway.
