Does anyone know how I can adjust the seat height in VR?

Yeah... you can easily bind that under controls.
I believe there is a default height setting in VR settings ingame, as well as control bindings for adjusting seat position, by default I believe the keyboard numberpad covers a bunch of seat adjustments.
