Which platform are you playing on? We've seen some other reports of this happening on Xbox and the team's currently looking into this, though there isn't currently a workaround or way to recover the prior settings unfortunately.
Hey I’m currently experiencing the same issue and I’m on Xbox every time I go to play it resets all my settings. Also and it keeps doing it after the update Tos or Eula pops up and I accept it, if that helps.
